Chef Ollie Dabbous will be in residence during Barbados’ Food & Rum Festival, collaborating with our Chef Executive Hance Bannister for two nights 25-26 October to create locally inspired dishes. Ollie is the Co-Founder and Executive Chef of the brilliant Hide restaurant in Piccadilly, London, which was awarded a coveted Michelin star and several other awards, all within six months of opening. Our guests are in for a treat this Friday and Saturday night, having the opportunity to try some of his dishes alongside Chef Hance’s team dishes also. The two chefs have developed a great friendship, with Hance visiting Hide over the summer.
